
Tender Pork Fillet with Pesto Potato Salad
Elevate your dinner game with this marinated and tender pork fillet paired with a fresh pesto potato salad.
Ingredients - 4 servings
Marinated pork fillet
500 g pork fillet
1 tbsp honey
1.5 tbsp soy sauce
1 tbsp olive oil
2 cloves of garlic - pressed
Black pepper, rosemary, thyme
Pesto potato salad
800 g firm potatoes
0.75 dl pesto
250 g sugar snap peas
50-100 g rocket
1 red onion
250 g tomato

Method - 40 minutes
- Trim the pork fillet.
- Mix all the ingredients for the marinade. Pour the marinade into a bag and add the pork fillet. Marinate for at least 30 minutes, preferably longer.
- Peel the potatoes (or rinse and scrub if the skin is nice). Dice the potatoes and cook until softened. Let the potatoes cool slightly.
- Finely chop the red onion and cut the tomatoes into pieces.
- Mix the potatoes with pesto, red onion, tomato, arugula, and sugar snap peas. Season with salt and pepper.
- Fry the pork fillet. Let it rest for 5-10 minutes before slicing.
- Serve the pork fillet with pesto potato salad.
